It's a jungle out there!

A huge jungle of recipes to try, that is. I was scrolling through the cocktail section of Reddit yesterday for a nice day drink that I had all the ingredients tucked away in my liquor cabinet to make. Then I came across this sweet bird. It was very pretty (I LOVE the foam on top), I liked all of the ingredients, and most importantly I had all of the ingredients.
The cocktail is called the Junglebird and the bright color reminds me of an exotic bird you might find in a jungle. Maybe that's how it got its name! So, onto the recipe...
Junglebird recipe
Ingredients
1 1/2 oz. Jamaican rum (I used Myer's, and this stuff has gotten expensive since buying my last bottle)
3/4 oz Campari
1/2 oz fresh lime juice
1/2 oz simple syrup
3 oz pineapple juice
pineapple fronds (garnish)
Method
Put ingredients into Boston shaker with ice.
Give it a good shake!
Prepare a rocks glass with crushed ice in it.
Using Hawthorne strainer, strain ingredients into rocks glass.
Garnish with pineapple fronds.
Tips
The person who posted this on Reddit suggested not to use simple syrup because the juices made it sweet enough. I made it without the simple as well and it was sweet. But next time I think I'll add the simple just to see the difference in taste. She also garnished hers with 3 pineapple fronds. It looked gorgeous, really giving it that exotic bird look with the fronds as the tail! But I didn't have a whole pineapple. I mean who really has a whole pineapple lying around unless you have a specific use for it, which it didn't. Maybe I should start keeping one around at least to make those pesky guests who won't go home as a sign.
So, cheers everyone and enjoy your Sunday Funday! And while you're at it, make a Junglebird. I promise you won't be sorry.
